These types of salads have that leafy greens in them.

Fancy Lettuce Wedge Salad
My sister Sherri (Queen) offered this fancy-smancy salad recipe and said to make it if you’re trying to impress someone. If you decide to use this recipe as a dip, leave out the lettuce.

8 oz. cream cheese, softened
1 teaspoon onion juice
Salt and pepper to taste
2 tablespoons blue cheese
2 tablespoons finely chopped green pepper
3 tablespoons chopped tomato
Head of lettuce

Mix all ingredients except lettuce. Quarter lettuce and scoop out about 1 to 1½ inches of the inside part of the lettuce; spoon mixture into middle of lettuce wedge and chill. Put on your deodorant and then very pretentiously serve this to your prestigious guests, except Uncle Booger, he doesn't count -- just give him some Vienna sausages and saltines and watch him close. He's already got your wire whisk and singing bird clock (as seen on TV!) under his shirt.

Cohutta Cole Slaw
I’m very aware that slaw ain’t salad, but if I want to put a slaw recipe in the Salads Chapter, I’m gonna do it! Youuuuuu can’tttttt stoppppp meeeeeee! And regarding this recipe: this is the only slaw that can be served at Whaley functions.

Small head of cabbage, grated
1 carrot, grated
1 small bell pepper, chopped
1 to 2 teaspoons dehydrated onion flakes
2 tablespoons (or more) Tarragon vinegar
1 teaspoon (or more) Garlic salt
1/2 cup Hellman's mayonnaise
Pinch of sugar
Chopped parsley (for garnish)

Mix together cabbage, carrot, and bell pepper in a large bowl. In a small bowl, mix together onion flakes, vinegar, garlic salt, mayonnaise, and sugar.

Add mayonnaise mixture to the veggies, stirring well. Season to taste and top with chopped parsley. Refrigerate.

Seven Layer Salad
This is my sister Sherri's (Queen) recipe. I don't like it because it has green peas in it. Yuck.

1 head lettuce, torn into bite sized pieces
1 cup chopped celery
1 cup chopped green pepper
1 1/2 cups chopped onions
1 cup green peas (yuck yuck yuck gag! How do you people eat this?)
1 1/2 to 2 cups mayonnaise
2 tablespoons sugar
2 1/2 cups cheddar cheese, shredded
8 strips bacon, cooked and crumbled

Layer this nasty stuff in this order:

  1. lettuce
  2. celery
  3. onions
  4. peppers
  5. peas (shoo wee)
Spread mayonnaise over peas (yuck); put sugar on top of mayonnaise, then cheese. Sprinkle bacon on top. Refrigerate four hours before serving to your green-pea-lovin' hordes.

Jiggly Gelatin Things
These are the congealed delicacies! It seems like anything with the name 'congealed' would not be considered a "delicacy” (except in Indonesia or Korea or something).

Note: one weekend, I was craving some congealed salad, but I didn't have any marshmallows. I went ahead and made the recipe, omitting them and I actually liked the taste better! It was still sweet enough, but it had a nice tart taste that I loved.

"Concealed" Salad
Boy is this recipe ripe with history! When I was much younger, my daddy worked for the Tennessee Valley Authority in construction. And every morning he had to leave the house way before dawn, to go to Tennessee and then catch a bus or something to get to Alabama to work.

One unfortunate day, my Daddy's lunch was stolen. He almost starved. He barely made it home due to hunger, weakness and the angst of missing his mid-day meal. The horror.

Well, he made up his mind that he was never going to go hungry in Alabama again, so whenever he packed his lunch after that, he packed TWO lunches. Just in case. He should have just hooked up a chain to the fridge and carried it with him. He probably would've if he could've fit it on the bus to Alabama.

My Meme used to make a yummy congealed salad we called "Green Stuff" that everyone loved.  One night, I made some Green Stuff and started to put it in the fridge when a little voice told me, "Heck no!"  I knew what would happen: Daddy would take the whole daggum thing in his lunch. So, I hid the Green Stuff under my bed.  Sure enough, Daddy went looking for it the next morning when he was packing his groceries and he couldn’t find it.

Daddy was mad, but he got over it and the family enjoyed the concealed salad the next day.

1 1/2 cups water
1 (8 serving-sized) package lime or orange gelatin
4 cups miniature marshmallows
1 cup chopped pecans
1 (8-oz.) carton Cool Whip
12 oz. cottage cheese
1 (8-oz.) can crushed pineapple

Mix water, gelatin, and marshmallows into a double boiler. On medium heat, stir constantly until the marshmallows are melted. Remove from heat and place into sink of ice water. When gelatin mixture has cooled for about 5-10 minutes, add in rest of ingredients. Chill.

Easter Salad
Here's another "concealed" salad recipe. I made this dish the day before Easter 1997. I thought I was going to make the Mandarin Orange salad, but I didn't have any orange gelatin. This was such a hit - I just had to write it down. It looks sort of funky, but it tastes great!

1 (3oz, 4-serving size) package lemon gelatin
1 (3oz, 4-serving size) package lime gelatin
2 small cans Mandarin oranges, reserve liquid
12 oz. container cottage cheese
2 (8-oz.) cartons of low-fat Cool Whip
3 cups miniature marshmallows

In a medium saucepan over low heat, mix together the reserved liquid from oranges (plus enough water to yield 2 cups), lemon gelatin mix, lime gelatin mix, and marshmallows. Stir constantly until marshmallows are melted. Remove from heat and place in a sink of ice water. When gelatin mixture has cooled for about 5-10 minutes, add in rest of ingredients. Refrigerate until firm (if you can keep everyone out of it for that long!).

Gen's Seafoam Salad
This is my mother-in-law Genevieve’s (Gillaspie) recipe, and it is a good way for the kids to get calcium and fruit. Don't ask Paul what color this is, he will say, "Beige." If the can of pears yields less than one cup of juice, just mix in water to make one cup.

1 cup pear juice (from the can of pears)
3-oz. (4-serving size) lime Jell-O
1 large can pears, reserve liquid
1 (8-oz.) carton Cool Whip, thawed
1 (8-oz.) package cream cheese, softened

Mix pear juice and Jell-O in a small saucepan. On low heat, stir constantly until Jell-O is dissolved, then remove from heat. In your sink, fill a third of the way with cold water and add ice. Set the Jell-O mixture in the sink (please leave this mixture in the pot... duh).

In a blender, puree pears, then add in cream cheese and mix until fine and well blended. Add pear mixture to Jell-O mixture and stir. Fold in Cool Whip; chill.

Mandarin Orange Salad
This is a good cool congealed salad to have with supper. My sister Sherri doesn't like the texture of cottage cheese, so she puts the cottage cheese in a blender when she makes this. To cut calories and make this a bit more tart, omit the marshmallows.

6-oz. package (8-serving size) orange Jell-O
1 (8-oz.) carton Cool Whip, thawed
16-oz. container cottage cheese
1 15-oz. can Mandarin oranges, reserving liquid
1/2 bag small marshmallows

Mix liquid from Mandarin oranges plus water to make one cup liquid and Jell-O in a small saucepan. On low heat, stir constantly until the Jell-O is dissolved, and add marshmallows. Stir again until marshmallows are melted, then remove from heat. Cool pan in sink of ice water until it thickens slightly. Mix together remaining ingredients. Chill.
